It's time to revive Zurich’s wild side. Join us for a stay at FIVE Zurich, a new luxurious lifestyle hotel and nightlife hotspot. As such, it boasts 7 international award-winning restaurants, a rooftop nightclub and buzzing outdoor social pool. Are you ready to detox before you retox?

Inside Five Zurich

At the foot of Zurich's famous Uetliberg, a new luxurious lifestyle hotel has recently opened its doors. It is the first hotel of the Dubai-born hospitality brand FIVE outside the emirates. Boasting 45 luxurious suites and 42 suite-sized lifestyle rooms with glittering skyline city view or mountain view, the hotel is also home to seven food and beverage outlets. Among them are restaurants, bars, a nightclub and the illustrious social pool. For us, it is the perfect place for a staycation in our home country.

Lunch at Soul Street

An excellent place for lunch is FIVE’s award-winning restaurant brand Soul Street. Here, the art of street food is celebrated. A vibrant mix of street art, created by some of the most talked about international street artists, can admired as well. While listening to buzzing tunes, we get to enjoy amazing dishes from the Indian, Middle Eastern, Asian, and Latin American cuisine.

In Dubai, Soul Street has also made a name for itself for their global street food party brunch, as well high energy dining events. We can't wait for them to also make an appearance in Zurich.

Relaxing at the Social Pool

After a delicious lunch, we head down to the enormous social pool. Here, we learn that FIVE Zurich's property can already look back on a rich past. The pool has always played a crucial part. Apparently, legends from Rihanna and Elton John, to Grace Jones and The Who have partied here before. We can understand why. It's hard to find a pool at a 5 Star Hotel in Switzerland with these dimensions. The whole setup is simply captivating.

As we're relaxing under Zurich's scorching summer sun, we enjoy Champagne and talk about our favorite topic: Watches! Which steel sports model would you wear at FIVE Zurich's social pool?

Maiden Shanghai

For dinner, there are several excellent options to choose from at FIVE Zurich. One is certainly the Maiden Shanghai. Here, Chef Luo Bing invites his guests to enjoy organic gourmet Chinese dishes. They are inspired by four renowned Chinese cuisines: Cantonese, Sichuan, Shanghai, and Beijing.

While the restaurant's terrace offers magnificent views over Zurich, its interior design is inspired by Shanghai's roaring 1920s. In this wonderful setting, Chef Bing takes us on a culinary journey through China.

The Penthouse

If you prefer fusion cuisine, then The Penthouse is your choice. Besides sushi, we order many other dishes inspired by Asian cuisine. We recommend to start the evening outdoors on the terrace before moving inside to immerse yourself in the opulent décor.

As the sun begins to set, The Penthouse gradually transforms into an exclusive nightclub. With live music as a regular fixture, guests can vibe to some of the world’s hottest DJs. There is even a mysterious bathroom bar that you just have to experience yourself.

Mixing Cocktails at The Vault

Every good night ends with a cocktail. And this is best enjoyed at The Vault. It features a classy bar and also boasts a versatile selection of Swiss wines. The in-house sommelier is happy to recommend the right wines and also cigars. Meanwhile, the skilled bar team is preparing cocktails - both classic and contemporary.

Hot days call for cold drinks. No other would be more suitable than Champagne. We compiled a list with some of our favourite cuvées for you to taste this summer. Head over to Instagram and let us know which one you would pick!

Armand de Brignac

Armand de Brignac Brut Gold

Let's start with Armand de Brignac. Their Brut Gold remains the most iconic cuvée in the range and rightly so. Its texture is deliciously creamy and the palate has great depth and impact with a long and silky finish. For us, this is a superb example of a Prestige Champagne. On the nose, peach, apricot and red berry aromas are followed by crystalized citrus, orange blossom and hints of brioche. The palate is rich with cherries, exotic fruits and a touch of lemon, vanilla and honey. The mouth feel is soft and creamy, with a hint of toastiness. This comes from the unique dosage which is aged for one year in French oak barrels.

Did you know that each bottle of Armand de Brignac is coated in metal and finished with the labels that get applied by hand? Only 20 bottles can be completed per person per hour in the winery.

Veuve Clicquot La Grande Dame 2006

La Grande Dame is a tribute to Madame Clicquot and to the creative and elegant souls who have followed in her footsteps. For La Grande Dame 2006, Veuve Clicquot created a blend of its eight classic Grands Crus: Aÿ, Bouzy, Ambonnay, Verzy and Verzenay for the Pinot Noir (53%); Avize, Oger and Le Mesnil-sur-Oger for the Chardonnay (47%). We love this cuvée's light gold color. It offers a complex notes of stone fruit, dried fruits, pastry, gingerbread, and even mocha. Expect freshness and a nice length. We love this opulent vintage!

Bollinger La Grande Année 2014

For their 2014 vintage, Bollinger blended 61% Pinot Noir, 39% Chardonnay, and a total of 19 crus. Fermented entirely in aged oak barrels, this vintage gave rise to a wine that is simultaneously structured, rich and complex. Get ready for a fruity nose with a slight scent of sea-air. On the palate, the initial sensation is a fine and intense effervescence, followed by a wonderful vinosity. Its very fine texture is accompanied by a delicate minerality and the complex flavours of orchard fruit and citrus. AT 8 grams per liter, it has a moderate dosage, making it a perfect Champagne to enjoy with gourmet food.

Taittinger Comtes de Champagne 2011

The first Blanc de Blancs on the list! According to Taittinger, the year 2011 was marked by early ripening and a spring drought. This forced the root network to delve deep in the earth in search of the water it needed for proper growth and resulted in a voluptuous Comtes de Champagne. The nose exhales delicious notes of gingerbread, liquorice and meringue. On the palate, it delivers aromas of delicate white fruit: peach, cherimoya and mandarin peel subtly blended with light touches of almond pastry. After 10 years of slow maturation in the cellars, you can enjoy a wine of great mineral power, dense, and rich with Chardonnays showing off their iodine character.

Rare Millésime 2008

2008 was an exceptional year in the Champagne region. The extraordinary conditions are reflected in the initial nose of the Rare Millésime 2008. The nose reveals a vast range of orange blossom, hyacinth, and white flowers. This is followed up by exotic notes of vanilla blossoms, a touch of fresh coconut, aromas of just-ripe Williams pear, and fresh almond. On the palate the crispy, precise attack is followed by exuberant aromas of fresh pineapple, freshly cut and crisp, passion fruit, kiwi and coconut, nuanced with tangy citrus notes. These exceptional exotic notes make the Rare Millésime 2008 a perfect summer Champagne.

Krug Grande Cuvée 169ème Édition

Krug Grande Cuvée is born from the dream of Joseph Krug to craft the very best Champagne he could offer. Every single year, regardless of annual variations in climate. Since 1843, Krug has honoured this vision with each new edition of Krug Grande Cuvée. It is a blend of over 120 individual wines from more than 10 different years.

Krug Grande Cuvée 169ème Édition was composed around the harvest of 2013, a year that beautifully expressed the unique characters of some of the House’s iconic plots. A light golden colour and fine, vivacious bubbles, holding a promise of pleasure. Aromas of flowers in bloom, ripe, dried and citrus fruits, as well as marzipan and gingerbread. Grilled notes and flavours of almond paste, quince, lemon, limoncello and dried fruit. This exceptional Champagne goes perfectly with Asian cuisine and even cigars!

Dom Pérignon 2012

The year 2012 was shaped by unpredictable seasons. Their force and generosity shaped an outstanding olfactory landscape imbued with remarkable variety. Combining intensity, contained tautness and extreme contradictions, the Dom Pérignon Vintage 2012 reveals a unique structure, channelled by an acidity and delicate bitterness that burst forth magnificently.

The nose is full and varied, mingling flowers with fruit, and the vegetal with the mineral. The bouquet is tactile, subtly enticing us along a trail of powdery white flowers and nectareous apricot, followed by the freshness of rhubarb and mint. On the palate, a welcoming opening is followed up by an explosion of effervescence and tonicity. Wonderfully acidic and bitter notes marry with scents of ginger and tobacco.

Laurent-Perrier Grand Siècle Nº 25

For their Grand Siècle Nº25, Laurent-Perrier has assembled vintage years 2008 (65%), 2007 (25%), and 2006 (10%). The result is a champagne that is brilliant in character with a white gold colour. It offers an intense nose of fresh citrus fruits, followed by subtle aromas of grilled almonds and brioche. The wine has a fresh and toasted attack. Its finish is persistent with notes of citrus fruit. We also love its exceptional aromatic depth.

de Venoge Prince Blanc de Blancs

The House de Venoge is a producer with a rich history. In 1864, Joseph de Venoge created a special cuvée in honor of the Princes of Orange. Its elegant and famous bottle recalls the crystal flasks in which European aristocracy used to decant their Champagnes in the early twentieth century.

Our favourite cuvée from de Venoge is the Princes Blanc de Blancs. It is made only from Premiers Crus and Grands Crus (Mesnil sur Oger, Trépail) wich are rigorously blended by the talented cellar master. This Champagne is made from 100% Chardonnay and shows wonderful mineral notes and has a great ageing ability. Its freshness and elegance are underlined by subtle aromas of white flowers and citrus. Serve it as an aperitif or pair it with a light starter. Definitely a must try!

Veuve Clicquot La Grande Dame Rosé 2008

Let's finish the list with an exceptional rosé. With La Grande Dame Rosé 2008, Veuve Clicquot has created a cuvée that also features 14% Pinot Noir still red wine from the Clos Colin in Bouzy. It's one of the most historical plots in the Veuve Clicquot vineyard.

The rosé Champagne is full-bodied and smooth at first, then becomes refined with fresh aromas. The Pinot Noir’s generosity resonates beautifully after a slow and long aging in the Veuve Clicquot cellars. The wine shows powerful notes of red fruits (raspberry and strawberry), combined with citrus notes (blood orange, grapefruit), and finally holds a perfect balance between subtle and spicy. The attack is delicate and smooth. Fruit outshines the palate and presents intensity in red and black fruits (cherry, strawberry, blackberry and blackcurrant). The strength and youth are carved by long aging notes, dried flowers and smoky notes, presenting an incredible complexity.

We hope you liked this list of outstanding Champagnes to enjoy this summer. For more content, click here.

Our first Artworth at Bucherer event outside of Switzerland leads us to Munich. Here, we stay at the iconic Hotel Vier Jahreszeiten Kempinski Munich and enjoy its outstanding amenities and central location. Join us on a classy trip to Bavaria's capital!

The iconic Jahreszeiten Lobby

Stepping inside the Hotel Vier Jahreszeiten Kempinski Munich, the first thing we experience is the iconic Jahreszeiten Lobby. Harmonious colours, comfy armchairs and an impressive copula incorporating the symbols of the four seasons. Dubbed "Munich’s most beautiful living room”, the lobby is the place where Munich’s locals and guests from all over the world meet and enjoy the specialties from the hotel’s very own patisserie.

Chef Patissier Ian Baker and his team create true masterpieces. Classic treats such as éclairs, petit gateaux and tartes are reinterpreted with a modern twist. Ian Baker also knows how to impress afternoon tea enthusiasts. We indulge in one of the finest English traditions with champagne, home-made scones with clotted cream and strawberry jam as well as a selection of savoury sandwiches being served.

A Drink at the Jahreszeiten Bar

Adjacent, the Jahreszeiten Bar combines cosy nooks with royal flair, which reflects the hotel’s rich history. We love the ambiance of this typical American Bar. Bar manager Aleksandar's cocktail creations focus on mixology drinks. Here, we enjoy classics such as the Negroni as well as some signature cocktails we recommend you to discover.

On the culinary side, the Royal Club Sandwich with truffles, lobster, and caviar awaits you along with other bar classics such as the Vier Jahreszeiten Burger or Tatar of Bavarian Ox. According to Aleksandar, you will find the best live music on Thursdays!

Inside the Jahreszeiten Cigar Lounge

Since we can't resist a fine cigar, we head over to the Jahreszeiten Cigar Lounge. It has the exclusive ambience of a British gentlemen’s club and is managed by Zechbauer München. Here we find the perfect atmosphere to enjoy a cigar.

Genuine Tobacco Leaf wall paneling and tables are featured in the Cigar Lounge. This interior takes us on a journey back into royal times. The only difference is the smoke extraction technology installed in the room. One of the most efficient systems available, visitors are able to enjoy a lounge without the smell of cigars, even leaving clothes odorless.

A truly royal Stay

After a good night sleep, we enjoy a rich breakfast in our suite. Various delicious dishes can be ordered and enjoyed in the room or on the balcony. Alternatively, it is also possible to enjoy the breakfast buffet in the Schwarzreiter Restaurant & Tagesbar.

Lunch at the Schwarzreiter Tagesbar

Located inside the hotel, the Schwarzreiter Tagesbar represents the more casual part of the Schwarzreiter dining experience. While the Schwarzreiter Restaurant offers a Michelin star culinary indulgence. Both the Tagesbar and Schwarzreiter Restaurant offer dining options, and all food is prepared by the same kitchen team headed up by Chef Hannes Reckziegel.

Get ready to experience “Young Bavarian Cuisine”, as each dish will always have a traditional Bavarian ingredient or method of preparation included within it. We love this regional and seasonal touch. Another nice aspect of the Tagesbar are the beautiful views onto the famous Maximilianstraße. Here you will see lots of super cars passing by.

Artworth at Bucherer

The third edition of our "Artworth at Bucherer" event series is the first one to take place outside of Switzerland. Spring has arrived. That means we're off to picturesque places with Mediterranean climate. Traveling from Switzerland, Lago di Como is an ideal place for an unforgettable weekend trip. Especially when staying at the marvelous Il Sereno!

Experiencing Il Sereno

With exceptional service, world-renowned design and unmatched location, Il Sereno offers you the chance to step out of the ordinary, and into a world of effortless relaxation and simple beauty.

Unwinding at the Pool

The hotel is surrounded by a lush, sunlit garden that offers fantastic views of Lake Como and invites you to take short walks along hidden passages. There are also two large vertical gardens and a plant sculpture by the famous garden architect Patrick Blanc.

At the center of the gardens is a nearly 20-meter infinity pool flanked by a large sun deck. Here, guests can relax and enjoy snacks and drinks. A small beach area near the pool offers the possibility of direct access to the lake. We take the opportunity to mix a classic Italian cocktail before sunbathing, the Negroni. Cheers!

Dinner

Dinner is served on a beautiful outdoor terrace overlooking Lake Como. The restaurant also includes a section that is located inside a former boathouse. A magnificent setting for a magical evening. It is in this unbeatable location where Chef Raffaele Lenzi spoils his guests with a modern and cosmopolitan cuisine. The guests can order à la carte or choose one of three tasting menus:

Breakfast

After a good night sleep, guests can enjoy a nice breakfast. You can choose if you want to sit outside or inside the former boathouse. Either way, guests can order delicious dishes including waffles, pancakes, and egg benedict.

A Day on Lago di Como

For centuries, Lago di Como has drawn visitors with its natural beauty and dramatic views of the southern Italian Alps. The lush gardens and idyllic small towns can best be discovered with a boat. Ideally a classic wooden boat!

Exploring the Lake

Lago di Como has a very characteristic shape, reminiscent of an inverted Y. It results from the melting of glaciers and erosion caused by rivers. This led to the formation of the two southern branches. In the midst of which, the picturesque village of Bellagio is located. But this famous town is not the only village worth visiting. We can also recommend stopping by Varenna, Tremezzina, or Menaggio. While it takes time getting around by car, you are very fast on the lake itself.

Villa Pliniana

One of the popular historic sights on the shores of Lago di Como is the Villa Pliniana. The magnificent estate is surrounded by lush vegetation and nestled into the rock. After rainfall, you see a stunning waterfall of seventy meters on the left hand side when facing the the building. For us, the perfect location to rest for a bit and enjoy a glass of Champagne.

Step inside the Signature Penthouse

The latest highlight at Il Sereno is the Signature Penthouse. Its exquisite interiors and furnishings have been designed by Patricia Urquiola and are inspired by post-war Italian glamour, ‘La Dolce Vita’, modernist Italian designers and Como silks . The suite is rich in high-quality materials including Canaletto walnut wooden ceilings, Verde Alpi stone walls and Ceppo di Gre and venetian terrazzo stone floors. The choice of furniture is a tribute to the emblematic pieces of Italian design.

© Il Sereno

The Signature Penthouse has a large living room, dining space, two bathrooms, and a master bedroom. All rooms offer spectacular lake views. We particularly love its large terrace. Here, a talented barman shows us how to mix one of his signature cocktails, the Astrea!

Thanks to perfect weather, as well as impeccable snow and ice conditions on Lake St. Moritz, 9'000 spectators made their way to the lake on this beautiful Sunday. After the first flat race, one of the first highlights takes place: The Credit Suisse skijoring. Praetorius, one of the favorites, loses his rider right at the start. Vienna Woods takes advantage and wins easily against Sociopath.

Up next is the GP Longines. Here, the horses compete in a flat race over 1'800 metres. Jockey Sibylle Vogt immediately takes the lead with Mordred and never relinquishes it. The Hungarian guest Arktisz comes in second ahead of Nimrod, a former winner of the Grand Prix of St. Moritz.

Exciting Novelties from Longines

The evening before the White Turf, Longines CEO Matthias Breschan gives us an overview of Longines novelties to be released in 2022. Among them will be new Legend Diver models. We are really excited to share more with you soon. The picturesque Seefeld is one of Zurich’s most elegant districts. Many majestic historic buildings can be found here, embedded in a serene and calm atmosphere. Among them is the La Réserve Eden au Lac. First opened on the lakeshore 100 years ago, the legendary hotel has kept its original charm. Lately, it was renovated and offers now a subtly artistic and rebellious touch.

Perched on the sixth floor and accessible directly via the glass elevator in the lobby, La Muña overlooks the city from its tree-lined roof terrace. A unique 360° view of the historic center, with the lake and the Alps in the distance, can be enjoyed here. Inside, the restaurant is a treasure chest. Imaginary memories of moments spent on the lake are paired with extraordinary objects found in the city and around the world. Characteristic is also the architecture. Situated inside the former attic beneath the hotel’s spectacular dome it features original brick walls and wooden floors. The furniture adds to the restaurant’s “harbor-master’s office” look.

Ultra-fresh and bursting with flavor, La Muña’s cuisine combines different textures, raw and marinated elements, acidity and sweetness. The dishes are based on carefully sourced ingredients, including some rarely found in Europe. Freshly prepared, these delicacies are designed for sharing in a convivial atmosphere. Each table can select Crudo or Caliente dishes. Guests get to enjoy ceviches flavored with spices and fresh herbs, but also beef steak teriyaki with truffle sauce, or sashimi served alongside wakame seriole with ponzu sauce. An amazingly delicious gourmet journey is guaranteed!

Unique City Views

From La Muña, two outdoor terraces are accessible. One of which can be entirely privatized. Whether on a sofa or at a table, under the huge parasols, guests can enjoy a relaxed and festive atmosphere while sharing the Japanese Peruvian specialties of chef Domenico Zizzi. His inventive and delicate cuisine has already delighted connoisseurs worldwide. We are lucky enough to have been among them!

Originating from Sweden, Carl Friedrik decided to re-invent the way of traveling. In pursuit of achieving high quality and a functional design, they developed a wide range of products. Two items particularly caught our attention. Let’s get hands-on!

For Travel...

Have you ever found yourself hurrying to the airport, dragging bulky suitcase behind you that had a missing wheel? Or did you ever stand in line at the check-in, realizing that your phone is almost dead? Carl Friedrik offers a stylish solution for both problems. Their suitcase guarantees a careless travel experience.

Since we often have short overnight stays, we usually only bring a carry-on. Few suitcases are as stylish than the ones by Carl Friedrik. Made from aluminium, they also bear high-quality leather details. Thanks to the Japanese spinner wheels, their carry-on is incredibly easy to manoeuvre. Not only that, but the suitcase also even follows you silently. You won’t be having any directional troubles.

When opening the carry-on, you will find two sets of compression straps and a compression pad, which will keep your things in place. This setup enables you to have clothes that don’t need ironing upon arrival. Another convenient feature is the option to add a battery inside the case. Two USB-A outlets are added to the suitcase like that, and you will be able to charge your electronic devices on the go.

...and for Work!

If you travel for work, Carl Friedrik has your back too. Their leather Palissy Briefcase can be used as a work portfolio in which you can put your laptop and documents. Thanks to the option for a smart holder, this briefcase it the ideal addition to your carry-on.

Made from luxurious Vachetta leather, this briefcase is nearly unmatched in terms of quality. The same leather is used by many luxury brands to craft bags. Guess what, comparable bags are almost never available below USD 1’000. Hence, you are sure to get great value for money. You will keep your goods safe, and you can travel efficiently in style.

Our Take on Carl Friedrik

In short, the set of Carl Friedrik carry-on and briefcase is your assurance for a quality travel experience. Keep your laptop safe and your linen shirts in a good condition. All that while arriving with a fully charged phone.

An essential part of the festive season is coming together with friends and family to catch up and enjoy each others company. Did you ever notice that at the heart of these activities is always food? That's why we made our way up to the iconic Bürgenstock Resort, situated high above Lake Lucerne, to do a Festive Season Tasting in four of their restaurants. From classic French cuisine to oriental flavors, there is something for every taste!

The Oak Grill

Our Festive Season Tasting starts at The Oak Grill Restaurant. Awarded with 14 Gault & Millau points, this restaurant celebrates Farm-to-Table from Nose-to-Tail. It is famous for its fine wood-fired grill that imparts exclusive flavors to Swiss gourmet meats. The atmosphere here is warm, cozy and yet classy thanks to a centered fireplace that sets a unique atmosphere. A great place to spend a night celebrating during the holidays.

The feast starts with a foie gras parfait, artfully shaped into a duckling. It continues with a delicious monkfish before an "Entrecôte Double" from a local farm is served. What a delight! For dessert, we get surprised by a beautiful Christmas tree covered in chocolate. Inside, it is filled with Griottes cherries, cinnamon and Centenario Concha 70%. A thing of beauty that looks almost too wonderful to eat!

Ritzcoffier

Contemporary French cuisine takes center stage at Ritzcoffier. Here, creatively composed menus focus on the finest ingredients mainly sourced from local producers. Seasonal dishes are paired with regional flavors, all combined with luxurious attention to detail.

Our evening begins with a deliciously tender Balik salmon, served with three free-range eggs and caviar. A wonderful start to an unforgettable evening. The salmon is followed by a "foie gras au torchon" with figs, port wine and local Bürgenstock honey. This is accompanied by a delicious brioche. We continue with a Breton lobster before the traditional "Beef Wellington" is served. This is a fillet of Hereford beef in a coating of truffle and puff pastry. Simply divine!

For dessert we are treated to a "Snow White Dome". This dome of white chocolate surrounds a cleverly composed dessert of citrus, basil and yogurt. The evening doesn't end here, however. A Christmas themed Friandise Trolley is wheeled up to the table. Artfully decorated, a variety of delicious chocolates are offered. The perfect ending to a wonderful evening!

Spices Kitchen Terrace

The Restaurant Spices Kitchen & Terrace with its oriental cuisine brings authentic flavors from Japan, China, India and Thailand to the heart of Switzerland. Awarded 16 Gault & Millau points, this restaurant offers not only gastronomy on a high level, but also magnificent views over Lake Lucerne.

Our feast here begins with a selection of delicious appetizers. Among them the delicious "Sushi Meshi Age No Avocado". It is crispy rice with avocado and a fresh mango salsa. With it, "Pla Hoy Shell Gub Kamin Kaow" is served. It is a salad with scallops in a homemade roasted chili paste and white turmeric. Extremely delicious! The third dish is called "Chai Shao Su". These Chinese-style baked Char Siu pork patties are a delightful taste experience.

The next course is a Seafood Paitan Soup. This classic Japanese seafood cream soup is enriched with shimeji mushrooms. Delicious! After the soup, three dishes are served again. All are shared among us at the table. One of them is "Khao Soi Gea", a noodle curry prepared in the northern Thai style with lamb. It is accompanied by an Indian "Awadhi Murg", a low-cooked chicken with cashews, shredded coconut & yogurt sauce. The third dish is a Sichuan "Zhang Dou Xia". These wok-fried giant shrimp are enriched with Sichuan pepper, crispy garlic and snake beans.

For dessert we get treated with a divine creation called “Spices Christmas Surprise”. A wonderful creation with bananas, pistachios, and litchi.

Lakeview Bar & Cigar Lounge

The Bürgenstock Signature high tea offers a mid-afternoon break to indulge in conversation and culinary delights. It is offered at the Lakeview Bar & Cigar Lounge which is characterized by its floor-to-ceiling panoramic windows overlooking Lake Lucerne. For the festive season, guests can now look forward to an Afternoon Tea of a special kind. Of course, scones must not be missing. These are enjoyed with various garnishes such as passion fruit cream, jam and clotted cream.

Furthermore, the Classic Afternoon Tea Sandwiches are served. These are accompanied by truffled arancini balls with Taleggio cheese. We found these particularly delicious. They go great with a glass of champagne! For the meat lovers, there is beef tartare and a delicious foie gras quiche with veal. If you prefer something lighter, you will love the salmon sandwich with lake trout caviar!

Of course, sweet pastries are a must for an Afternoon Tea. Especially during the Christmas season! We enjoy a hazelnut choux, a Santa hat made with linzer tart and cranberry, and other treats like gingerbread or an apple Christmas treat. As a special highlight there is also a Gugelhupf from chestnut and with spices. Simply delicious!

Once it gets a bit colder outside, we are in the middle of the Swiss Alps after all, the guests head inside where the pleasant evening continues. We are seated on two large tables. A familiar atmosphere and genuine happiness unfolds as more delicacies are served. The starter, a wonderful creation with foie gras and a dish with veal on a salmon sauce, is paired with a Veuve Clicquot Rosé poured from a magnum bottle.

We then continue with an incredible creation made from tomato essence, followed by perch fillet. Both paired with the incredible La Grande Dame 2004 cuvée. Getting to know Dario Cadonau

We had the chance to sit down with Dario Cadonau and talk about how he became a top chef. He also tells us what influence nature has on this cuisine and what inspires his cooking style.

When did you start dreaming of owning your own hotel?

It was very early on. I was the one in our family who fell in love with gastronomy and the hotel business. As a child, I liked to cook at home; for me but also for friends. It always fascinated me. I then went on and built my career on that passion. I told myself that I would certainly like to run my own restaurant and, if possible, my own hotel. This dream has followed me from an early age. With my apprenticeship as a chef, my career finally took shape.

Who or what inspired you on your path to becoming a top chef?

During my apprenticeship at Suvretta House, I had the opportunity to follow and participate in competitive culinary art exhibitions. I was always very impressed by that. The Suvretta House has a large, classic kitchen with over 50 employees. Things got rough there from time to time. As an apprentice, you had to get down and dirty. That pushed me forward and I had the opportunity to develop a certain perfectionism in my work. I was then able to get to know the haute cuisine in the context of national and international competitions. There, it was all about the visual arrangement, color combinations and so on. I was fascinated by this kind of cooking and was shaped accordingly. After my apprenticeship, I knew that I wanted to work in gourmet gastronomy. This world fascinated me. I am a person who likes to work precisely and has certain ideas that go in the direction of perfectionism. That then followed me. I went to Philippe Rochat in Crissier, then to Daniel Bumann in La Punt, and to Germany where I worked for the 3-star chef Harald Wohlfahrt. This time shaped my current style.

What makes the gastronomy in the Engadine special?

The Engadine, a long high Alpine valley region in Switzerland, is enormously diverse. In addition, there is a hotspot for luxury hotels and top gastronomy in the central and upper part of the Engadine. In the small village of St. Moritz alone, there is an enormous density of 5-star hotels of considerable size. This is extraordinary! It was built and shaped this way because St. Moritz had an international attraction early on. Guests come from far and wide to the Engadine to enjoy the region. I think it has so many beautiful facets. From sports and museums to music. There is so much to experience! Consequently, culinary delights also play an important role here.

What influence does nature have on your cuisine?

A very important one. At IN LAIN we have geared our cuisine to it: It is very close to nature. We have many products from our own production. For example, flowers, herbs and so on. Our neighbor is also a farmer who grows many products for us. In addition, we have a large vegetable garden on our property. We also work closely with other farmers and fishermen in Switzerland who supply us. It's important to me to know where the products we process come from. When we started 11 years ago, we were also the first to include the local pine trees in our culinary concept. We started with a pine syrup that we serve with champagne as an aperitif drink. This is still the welcome drink our guests enjoy upon arrival. Then we created other dishes like fillet of beef wrapped in a pine crust. Today we serve chocolates, bread but also drinks with it. The Swiss stone pine is native up here, characterizes our cuisine and is part of our DNA.

What role do wine and champagne play in your cuisine?

For me, both are part of a good meal. We are always trying to develop our offering in this area. Especially with regard to our gourmet menu. In our gourmet restaurant, we have always offered a wine accompaniment. Now we also offer a champagne accompaniment. In Switzerland, the latter is unfortunately not as well-known as in France. There, especially in the Champagne region, you will find almost no wine on the menus. There are some, but in most restaurants, champagne is the preferred drink. It is a food companion over there. In Switzerland, that’s a little less the case. That's a pity because anyone who has experienced it knows that it is something wonderful. Personally, I prefer a champagne accompaniment because I feel much fitter the next day than with wine. At least that's the way it is with me. I like that!

What does the collaboration with Veuve Clicquot mean to you?

The Veuve Clicquot team approached me and asked me if I would like to become an international ambassador for the brand and the prestigious La Grande Dame Cuvée. Before accepting, I took my time to consider it. For me, it is important that I can identify with the product and the brand in such collaborations. I'm not interested in just being an ambassador for anything. That's not my world. For me, it's about identifying with a product and a story. With Veuve Clicquot, I found a lot of similarities. Especially with Madame Clicquot, the inventor of the “pupitre de remuage” and Rosé Champagne. She was a pioneer in the industry. In terms of history, there are a few parallels between this French Maison and us at IN LAIN in Switzerland. Especially since we have built something in a very remote place that works and is successful. We must find creative ways to obtain consumers or guests for our products and services. It was the same with Madame Clicquot. That's why we found each other and started working together in December 2020. We were able to create a win-win situation for both.

What do you do to switch off and get inspiration?

I’m passionate about cars. I have a few and I enjoy taking them out for a drive. Although I like some models and brands, I would like to highlight my Corvette in particular. It is a Special Edition, which can also be driven on the racetrack. Really cool! But family and nature are just as important to me. Just like I relax during a car ride, I can also experience that during a walk in the woods where I find inspiration. Likewise, during a hike including a BBQ with my family.

Staying at the IN LAIN Hotel Cadonau

The main building has preserved its classic Engadine style for over 450 years. New buildings have been added recently. They blend in harmoniously with modern lines and clad in natural wood. It is obvious that the architect drew inspiration from the surrounding pine and larch forests.

After a thrilling hike or mountain bike tour, guests can unwind at the natural swimming pond in the hotel garden. The water even comes from their own natural spring. Next to it, the wonderful garden sauna can be found. While sweating, the fragrance of local pine is breathed in and breath-taking views of the mountains are enjoyed. If sauna is not your thing, then the bathing tub might do the trick. Have a bath in pine infused water heated to 38°C. Did you know that local pine has many qualities which have a positive effect on health and well-being? We definitely felt its soothing effect!

One of the fascinating things about the IN LAIN Hotel Cadonau is the original building's history. Many of the old elements like the cellars or the living room have been professionally restored and are now part of the hotel. This let's guests dive into a unique world. Another factor is the local pine wood used for construction, interior design and furniture. It creates a very familiar and intimate atmosphere and looks very authentic.

After a relaxing night, we enjoy a rich breakfast. There is a lovely buffet with local bread and charcuterie. Dishes like omelettes or carefully prepared eggs can be ordered too. A great way to finish our stay here at the IN LAIN Hotel Cadonau. We hope to be back soon!
